Raspberry muffins

Looking for a yummy healthy muffin for a snack – These muffins are simple and healthy!

**I don’t like zesty flavour but you can add 1 tsp grated lemon zest to the dry ingredients**

Ingredients:
130gms (1& 1/3 cups) plain or wholemeal flour

1/2 Tsp baking powder

1 cup frozen raspberries

2 eggs

1/4 cup milk

65gms melted butter

2 tbsp honey

3 tsp white chololate powder (YIAH)


Method:

Preheat oven to 180degrees

Lightly cover muffin moulds with butter or line with baking paper

Combine all dry ingredients

Stir through raspberries – coat well

Lightly whisk eggs, milk, melted butter and honey and add to dry ingredients

Combine.

**Thermomix – combine 30seconds Speed 4-  all ingredients except berries, transfer  mixture to bowl stir though berries**

Place in prepared muffin moulds and cook for 20-25minutes or until brown

Store in air tight container in fridge or freezer!
