Healthy Choc-coconut Christmas Balls

If your looking for a healthy option to the beloved chocy balls this Christmas you will not look back after trying these.

 

Like everything I make they are SUPER easy and quick! I make them every week as a healthy snack in the fridge – they are the perfect alternative to a chocolate fix. I even have them for breakfast sometimes on my way out the door!IMG_0340-1

Ingredients:

  • 1/4cup Almonds
  • 3/4cup Rolled Oats
  • 2tbls LSA (found in the supermarket – you can also use Linseed)
  • 1tbls Chia seeds
  • 3tbls cocoa or cacao powder
  • 1 & 1/3cup dates (soaked)
  • 2tbls coconut oil

 

Method:

First put the dates in boiled water to allow them to soak,

Put all dry ingredients into the food processor and pulse until finely chopped.

Drain dates and add to the mixture – pulse until mixture sticks together and dates are finely chopped.

Add the coconut oil and combine.

I let it sit for 10mins or so – as the dates will warm the mixture and the coconut oil will be very runny.

Once cooled roll into balls and store in fridge!
