To help cut out the processed food in our lunch’s I went searching for a healthy snack to replace the muesli bar and I found this!
Its perfect and tastes amazing – still has a little honey in it which is broken down in the body just like refined sugar – just a little reminder to not get fooled into thinking your eating something sugar free! Honey does have other benefits which you can not get from refined sugar. I do also add some dark chocolate chips – these are optional.
- 1cup dry or rolled oats
- 2/3cups shredded coconut
- 1/2cup peanut butter – get the organic on in Coles – its perfect!
- 1/2cup LSA
- 1/2cup dark choc chips
- 1/3cup organic honey
- 1tbls chia seeds
- 1tsp vanilla extract
Mix everything together and roll into balls! I put them straight into an air tight container in there fridge – takes roughly half an hour for them to set:)
